A salad a day keeps the doctor away

In my constant search how to inspire people to live healthier and happier life, I want to invite you to join me in this one week challenge. All you need to do is eat one salad a day as a main course or as a side dish to add more fresh crunch to your meals. I am dropping some suggestions only, change and adjust to your liking. Opt to use as a dressing good quality olive oil, fresh lemon juice, mustard fresh/ dry herbs. I believe in non-waste attitude and opt to use my veggies in multiple forms and combination.

Adding nuts or seeds to the salad gives a nice crunch plus healthy oils, adding dry fruits adds some sweetness and makes us chew more, prolonging the meal time. When we eat slower we feel fuller with less food. Plus adding colourful ingredients makes the plate very pretty and appealing.

Day 1:

Carrot salad:

Easy, quick and yummy. Shredded carrots, chunk of goat feta cheese, some fresh parsley, lemon juice and olive oil...DONE

( no salt added as cheese has sufficient amount of salt









Day 2:


Mix and match salad

A handful mixed green leaves( 1/3 of a pack 140g), 6 cherry tomatoes 🍅, 6 pcs mini buffalo milk mozzarella, seeds of 1/4 pomegranate, 1/3 of a cucumber, olive oil and lemon juice maybe a pinch of salt if needed...DONE









Day 3:

Fennel salad:

1 bulb fennel, 6 pcs walnut halves, 1/2 apple, 1 Tbsp cranberries, lemon juice and olive oil pinch of salt

I use mandolin slicer to make very thin slices of the fennel and the apple and prep this salad 30 min in advance so all flavours infuse nicely...








Day 4:




No waste, great taste salad:

Seeds of 1/2 pomegranate, 6-7 cherry tomatoes, 6 walnuts halves, handful parsley, chunks of goat feta cheese, pomegranate molasses ( if nor available no problem add 1 tbsp honey), lemon juice and olive oil...









Day 5:


Shrimp & baby potatoes salad

5-6 spring baby potatoes, washed and boiled, shrimps 🍤 cooked in olive oil with black pepper, sweet paprika and pinch of salt, once potatoes and shrimps are cooked assemble the salas adding 5-6 cherry tomatoes, parsley lemon juice ...Done










Day 6:


Canned Tuna in olive oil salad

5-6 baby potatoes washed and boiled, 5-6 cherry tomatoes, 1 pcs. canned tuna in olive oil use the oil in the salad, spring onion or some shallots, parsley and lemon juice

Potatoes can be boiled earlier, this salad travels well, if not to be used immediately add onions before eating, less odour...









Day 7:



Beetroot and Feta cheese salad

2pcs of cooked beetroot sliced on the mandolin, some walnuts halves, some sheep Feta, parsley to garnish, honey/mustard/ olive oil and lemon dressing....Done












This were just few ideas of salads, prep and cooking time no longer than 20 min, easy to plan, no products wasted easy to make yummy to eat.
